You should give boeuf bourguignon a shot. :) Do you have trouble with all the mother sauces, or just hollandaise?
Actually I usually don't have trouble with sauces at all, and I love making them. Hollandaise is just a petty obnoxious sauce that doesn't want to behave
But...it's just so delicious and yellow....
